Quick and Easy Gluten-Free Oatmeal

Some days we just need to leave the house quickly. But my boys also need to eat something filling so they’re not a mess at school or camp until they get lunch. My favorite easy breakfast is oatmeal in the microwave. Some days I put everything but the kitchen sink in it and other days I just put cinnamon, brown sugar, and milk.

Either way, it takes 2 minutes (literally) and they love it (unless it’s a day when they don’t like anything). Chex just came out with gluten free oatmeal in a bag or in single serving packets. The one pictured here is plain oatmeal with no flavoring or sugar. Here’s my recipe for days when I’m not sure what my boys will eat for lunch.

Chex Gluten-Free Oatmeal with Peanut Butter and Whole Milk

1/2 cup Chex Gluten Free Oatmeal
3/4 cup whole milk
Cinnamon
pinch of salt
1 tablespoon of peanut butter
1/2 banana cut up
Handful of golden raisins

Ingredients

Put oatmeal, milk, cinnamon, and salt in a medium-size microwave safe bowl.

Milk

Heat on high for 1 1/2 to 2 minutes. Let cool for a minute in a small bowl. Mix in peanut butter and banana. Sprinkle with raisins. Enjoy!
